UTF-8 encoding

Hi all,
I am a complet beginner with autohotkey. I need my program to work with the encoding UTF-8 so it can handle several languages such as Chinese for example.
For now, when dealing with Chinese characters, my program return question marks.
What should I do about it please?
In particular I use the function FileAppend, I know this function can be supplied with encoding requirement but I have not found an example of how to properly write it.

Can somebody help me please?

Add FileEncoding, UTF-8 to the top of the script?
