On the AutoHotkey_H page https://hotkeyit.github.io/v2/ there's two versions:
AutoHotkey_H v1
AutoHotkey_H v2 alpha
Does alpha mean that it's not even in beta phase?
Is it ready for production projects? or should I go with v1?

I have been using v2 for years and if you don't fear syntax changes I would suggest to use v2.

AHK v2 itself is still in alpha, so likewise AHK_H v2 is in alpha. it seems just as stable as regular AHK v1. i think the only reason for the 'alpha' label is because lexikos still may make changes to the syntax which break scripts
